Mashed Garlic Cauliflower

I love mashed potatoes! Unfortunately, they aren’t the healthiest side dish.

Cauliflower is one of those vegetables that I really don’t love. It doesn’t have a strong flavor and has a weird texture. The more and more I cook with healthy ingredients the more I realize that you can transform a boring ingredient into something scrumptious:) I added dill in this recipe because I thought it was a great compliment to the Greek yogurt but you can substitute it for any dried or fresh herb of your choosing.

Mashed Garlic Cauliflower
1 head of Cauliflower
3 cloves of Garlic
3 tbls Non Fat Greek Yogurt
1 tsp Dried (or 1/2 fresh dill)

Wash and cut the cauliflower into florets. Then grate the cauliflower with cheese grater or food processor. Peel and roughly chop garlic cloves. Put grated cauliflower and roughly chopped garlic cloves in a microwave safe container and microwave for 8 minutes until soft.
Put cooked cauliflower and garlic in food processor or blender and purée until smooth. Add the Greek yogurt and the dill.

Peanut Butter Yogurt Fruit Dip

I ran across this dip on pinterest, my new best friend because it is such a great resource for trying new things and getting fresh ideas. I modified it a bit from the original recipe and I was SOO thrilled with the results!

Peanut Butter Yogurt Fruit Dip

7 oz Greek plain yogurt
1/2 capful vanilla
3 tsp honey
1/4 tsp cinnamon
3 tbl peanut butter
Mix all the ingredients together until smooth and well incorporated. Enjoy with a delicious apple or fruit of your choice!

Brussel Sprouts… Say WHAATT?

Growing up, brussel sprouts were the bane of my existence. My mom used to steam them and force them upon us. I still can’t stand them steamed, but I’ve found a way that I like them! I love when a vegetable becomes palatable! These sort of taste like french fries… yummm…

Brussel Sprouts

Preheat oven to 400 degree F

Ingredients

1 cup of brussel sprouts

Extra Virgin Olive Oil

Salt

Cut the brussel sprouts in half and place them on a cookie sheet covered in tin foil. Place the brussel sprouts on the sheet with the flat side up. Lightly drizzle EVOO on the brussel sprouts and sprinkle salt sparingly on the brussel sprouts as well.

Place the brussel sprouts in the 400 degree oven for 20-30 minutes, checking every ten minutes. You want the brussel sprouts to be golden on the bottom and cooked all the way through.

OR

You could choose to grill them on the George Foreman! Either way, you get the same great taste😀

Better than Ranch!!!

I came up with this veggie dip a little while ago. I was sick of eating plain ole’ veggies and wanted to mix things up. This is so flavorful, rich and creamy. I brought this to a party and it was a big hit!

Better than Ranch Dip

8 oz Low Fat Greek Yogurt
Italian Dressing season packet ( add to taste)
Mix the Italian Dressing Seasoning packet into the Greek yogurt, you can taste test it as you go.
Enjoy with celery, carrots or cucumbers

 

Super Yummy No Bake Cookies!!!

Chocolate Chocolate Chocolate!!! Ambrosia from the Gods!! I needed cookies tonight, but I wasn’t going to settle for crap we so often settle for:) So, I did what any tech savvy girl with a huge chocolate craving would do…. google it. I came across this gem! Thank grace.mbdblog.com!

Chocolate Oatmeal Cookies (no bake)

  • 1/4 cup Coconut Oil or Butter
  • 1/4 cup Honey
  • 4 teaspoons Cocoa Powder
  • 3 Tablespoons Rice Milk, Almond Milk, OR Water
  • 2 dashes of Sea Salt

Heat the coconut oil, honey, cocoa, rice milk, and sea salt over medium heat until it comes to a boil. Boil for 1 minutes and remove from heat. Then add:

  • 1/2 teaspoon Vanilla
  • 1/4 cup Peanut Butter (no sugar)
  • 1/4 cup Whole Wheat Flour
  • 1 1/2 cups Oatmeal

Stir well and drop by the tablespoon onto parchment paper, glass plate, or wax paper. Makes about 12 cookies.

HOLY HANNAH…. This cauliflower crust pizza is delectable!

I was at work the other day and they brought in pizza, I LOVE pizza!!! I had such a hard time saying no, but was able to stay strong thanks to my support system. I knew there was SOME way I could make a pizza and have it be healthful and delicious! Thank goodness for pinterest!

Hawaiian pizza happens to be one of my favorites, I love savor and sweet things paired together… HEAVEN! I found this recipe and I had to give it a go! I used turkey bacon (sooo good), tomato-basil sauce (the trick is to find a brand that as no sugar and ingredients you recognize), low moisture mozzarella cheese and canned pineapple. This pizza was very filling and good! I can’t wait to make this again!

cauliflower crust hawaiian pizza

Yield: One 9 to 12-inch pizza (feeds 2 to 3 people)

Prep Time: 25 min

Cook Time: 18 min

Ingredients:

CRUST:
1/2 LARGE head cauliflower (or 2+ cups shredded cauliflower)
1 large egg
1 cup finely shredded mozzarella cheese (or try another kind!)
1 teaspoon dried oregano
1/2 teaspoon dried minced garlic (or fresh garlic)
1/2 teaspoon onion salt

TOPPINGS:
1/2 cup tomato-basil marinara sauce (or pizza sauce)
1/2 cup finely shredded mozzarella cheese
3 slices Canadian bacon, cut into strips
1/2 cup pineapple tidbits

Directions:

1. Shred the cauliflower into small crumbles. You can use the food processor if you’d like, but you just want crumbles, not puree. You’ll need a total of about 2 cups or so of cauliflower crumbles (which is about half a large head of cauliflower. Place the cauliflower crumbles in a large bowl and microwave them (dry) for 8 minutes (see Tips below if you do not have a microwave). Give the cauliflower a chance to cool.

2. Prepare the crust: Preheat the oven to 450 degrees F. Spray a cookie sheet or pizza pan with nonstick spray (or use a nonstick surface). In a medium bowl, mix the cauliflower crumbles (about 1 1/2 cups since they shrink after cooking) with the remaining crust ingredients. Pat the “crust” into a 9 to 12-inch round on the prepared pan. Spray the crust lightly with nonstick spray and bake for 15 minutes (or until golden). Remove the crust from the oven and turn the heat up to broil.

3. Prepare the pizza: Spread the sauce on top of the baked crust, leaving a 1/2-inch border around the edge. Sprinkle 1/4 cup cheese on top. Add the bacon and pineapple, spreading it out around the pizza. Sprinkle the remaining cheese on top. Broil the pizza 3 to 4 minutes, or until the toppings are hot and the cheese is melted and bubbly. Cut into 6 slices and serve immediately.
